But the journey doesn't stop at tasting. Niskala Tours offers you the opportunity to roll up your sleeves and participate in preparing these traditional dishes. Under the guidance of our skilled hosts, you'll learn the art of crafting authentic Balinese cuisine. From grinding spices to perfecting the balance of sweet and savory in dishes like laklak dessert (Balinese pancake), every step is a chance to deepen your connection with Balinese culture. Our cooking experiences take place in authentic settings of Paon (Balinese kitchen), where the ambiance resonates with the spirit of Bali, where you'll experience firsthand the joy and pride that Balinese families take in their culinary traditions.

What is a Paon?

The Paon, or Balinese kitchen, is more than just a cooking area—it is a cultural and spiritual hub. Typically located in the outermost (kelod) zone of the house compound, the Paon is considered part of the Nista (profane) zone, as it deals with worldly, practical activities. However, its role in sustaining the family and its integration into daily rituals elevate its importance. The Paon is usually a small, open-air structure made from natural materials like bamboo, wood, or thatch. Its layout is minimalist, often with a dirt or stone floor and basic cooking tools. The central feature of the Paon is the hearth (pasepan), a wood-fired stove made from clay or bricks. Cooking over an open flame is an essential aspect of preparing Balinese food, as it infuses dishes with unique flavors and a sense of authenticity. Cooking in a Paon is an immersive, sensory experience. The open flame, the aroma of spices, and the natural surroundings create a connection to the earth and the cultural roots of Balinese cuisine.
